The process itself, being so tactical and deliberate. In a world where automation reigns supreme, there’s something almost rebellious about taking the time to slow down enough to savor the process.
Each hiss and pop of the warming boiler. The smell of freshly ground beans that percolates the air. The warmth of the portafilter in your hand. And the soft, but firm compress of the tamp before the mechanical and industrial feel of metal on metal locking the portafilter into the grouphead. The pneumatic pump pressurizing against the puck — all for a cone of fresh espresso.
It’s a reminder of the most satisfying things in life are often found at the intersection of detail and patience.
